Almond Butter Strawberry Oatmeal Bars Ingredients

  • 2 cups old-fashioned rolled oats (not quick oats)
  • 2 ripe bananas, mashed (about 1 cup)
  • 1/3 cup unsalted almond butter
  • 1 cup chopped fresh strawberries (or frozen, thawed and drained)
  • 1/2 cup unsweetened soy milk (or other plant milk)?
  • 1 tablespoon ground flaxseed
  • 1 teaspoon ground cinnamon

Instructions

  1. Heat the oven to 350°F and line an 8-inch square baking pan with parchment, leaving an overhang for easy removal.
  2. In a medium bowl, stir together the mashed banana, almond butter, soy milk, ground flaxseed, and cinnamon until smooth.
  3. Fold the oats into the wet mixture, then gently fold in most of the chopped strawberries, reserving a few for the top.
  4. Press the mixture evenly into the prepared pan, smoothing the top with the back of a spoon; next, scatter the reserved strawberries on top and press lightly so they stick.
  5. Bake for 25 minutes, or until the edges are golden and the center is set. Finally, remove from the oven and cool completely in the pan on a wire rack before using the parchment overhang to lift and slice into 8 bars.

  • First, use very ripe bananas for natural sweetness and binding.
  • If using frozen strawberries, thaw and drain them well so the batter doesn’t get too wet.
  • For firmer bars, press the batter tightly into the pan before baking and cool fully before slicing.
