Instructions
- Warm the olive oil in a soup pot over medium heat. First, cook the onion, carrots, and celery for 6 to 8 minutes until softened.
- Add the garlic and thyme. Cook for about 30 seconds until fragrant.
- Add the chicken, rinsed quinoa, and chicken broth. Bring to a boil, then reduce the heat and simmer partially covered for about 20 minutes, or until the quinoa is tender and the chicken is cooked through.
- Remove the chicken and shred it with two forks. Then return the shredded chicken to the pot.
- Stir in the spinach until wilted. Finally, finish with lemon juice, chopped parsley, and salt and pepper to taste.
