  • 1 yellow onion, diced
  • 1 fresh poblano pepper, seeded and diced
  • 1 jalapeño, seeded and minced, optional
  • 3 garlic cloves, minced
  • 2 teaspoons ground cumin

  • 1/2 teaspoon ground coriander
  • 4 cups chicken broth
  • 1 cup fresh or frozen corn
  • Juice of 1 lime
  • Sea salt and black pepper
  • Fresh cilantro and avocado for serving

Instructions

  1. Warm olive oil in a large pot. Cook onion and poblano for 6 to 8 minutes. Add jalapeño if using.
  2. Add garlic, cumin, oregano and coriander. Stir for 30 seconds so the spices bloom.
