A crisp-skinned, herb-butter roast chicken with garlic and lemon, served with roasted potatoes and carrots.
Bright, savory, and reliably juicy, this Garlic Herb Oven-Roasted Chicken is a weeknight hero and a special-occasion centerpiece. Aromatic garlic, fresh herbs, and under-skin butter create crisp, golden skin and well-seasoned meat that’s simple to pull together.
Garlic Herb Oven-Roasted Chicken Ingredients
- 1 whole chicken, 3.5–4.0 lb (1.6–1.8 kg), giblets removed
- 4 tablespoons unsalted butter, softened
- 2 tablespoons olive oil
- 6 garlic cloves, 1 minced and 2 left whole
- 1 lemon, halved
- 2 teaspoons kosher salt, plus more for vegetables
- 1 teaspoon freshly ground black pepper
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon dried oregano
- 1 lb (450 g) baby potatoes, halved if large
- 3 medium carrots, peeled and cut into 1-inch pieces
- Optional: 1 small onion, quartered
Instructions
- Preheat the oven to 425°F (220°C) and place a rack in the oven center. First, remove the chicken from the fridge 20 minutes before roasting to come closer to room temperature.
- Pat the chicken dry thoroughly with paper towels—dry skin = crisp skin. Next, tuck the wing tips under the bird.
- In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, parsley, oregano, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Mix to a smooth paste.
- Gently loosen the skin over the breasts and thighs by sliding your fingers between meat and skin. Then, spread about two-thirds of the herb butter under the skin, smoothing it over the breasts and upper thighs. Rub the remaining butter over the exterior of the chicken.
- Season the cavity with a pinch of salt and pepper, and stuff with the halved lemon and the 2 whole garlic cloves. Tie the legs with kitchen twine or tuck them under the bird.
- Meanwhile, toss the potatoes, carrots, and onion (if using) with olive oil, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper. Arrange the vegetables in a single layer in a roasting pan or large ovenproof skillet, and place the chicken, breast-side up, on top of the vegetables.
- Roast for 60–75 minutes. However, begin checking at 55 minutes because oven performance and bird size change timing. The chicken is done when the skin is deeply golden and an instant-read thermometer in the thickest part of the thigh reads 165°F (74°C).
- If the skin is browning too quickly, loosely tent the chicken with foil for the remaining time. For extra-crispy skin, remove the foil for the last 10 minutes of roasting.
- When done, transfer the chicken to a cutting board and let it rest 15 minutes before carving—this helps lock in juices. Meanwhile, toss the roasted vegetables gently in the pan juices and serve alongside carved chicken.

Substitutions
- Butter: Substitute an equal amount of olive oil for a dairy-free version; brush under and over the skin sparingly.
- Fresh herbs: If using dried, use one-third the quantity (for example, 1 tsp rosemary, 1 tsp thyme, 1 tsp parsley) and mix into the butter.
- Potatoes and carrots: Swap with parsnips or sweet potatoes. Alternatively, add a can of drained garbanzo beans in the last 20 minutes—canned garbanzos are allowed.
- Smaller bird: For a 3 lb chicken, start checking at 45–50 minutes; adjust rest time proportionally.
Storage and Reheating
- Refrigerate cooled leftovers in an airtight container up to 3–4 days.
- For best texture, reheat portions in a 350°F (175°C) oven for 12–18 minutes until warmed through; cover loosely to prevent drying. Reheat vegetables on a rimmed sheet for 8–10 minutes.
- Shred leftover chicken for salads or sandwiches; toss with a little olive oil and lemon to revive flavor.
FAQs
- Can I roast this chicken at a lower temperature? Yes—roasting at 375°F will work, but increase cook time to about 90–105 minutes; the internal temperature target remains 165°F (74°C).
- How do I know when the chicken is done? Use an instant-read thermometer in the thickest part of the thigh without touching bone. 165°F (74°C) is the safe minimum temperature.
- Should I baste during roasting? Basting is optional. Basting once or twice can add gloss to the skin, however it opens the oven and can lengthen cook time slightly.
- Can I prepare this ahead? You can make the herb butter a day ahead and keep it chilled; apply it to the chicken up to 2 hours before roasting for convenience.
Serve this Garlic Herb Oven-Roasted Chicken with a simple green salad or steamed greens and a squeeze of lemon for brightness. Leftovers make great sandwiches, grain bowls, or a quick pasta topping.
